Sunshine Bakery started as a one-oven dream and grew into the heart of Bolivar's Main Street. We believe bread is worth waiting for — that the best loaves need time, good flour, and hands that know the difference between almost and just right.
Every morning, our bakers arrive before sunrise. By the time you walk through our door, the racks are full, the coffee is fresh, and the place smells like Saturday.

Our menu changes with the seasons and the grain. Here's what you'll find on our counter most days.
Our signature loaf — 24-hour fermented, crust crackling, crumb open and airy. Baked in batches of twelve.
French technique, local butter. Seventy-two layers, laminated by hand, brushed with egg wash and baked until deep gold.
From peach galettes in July to pumpkin tarts in October — we let the calendar decide what goes into the oven.
Single-origin beans, roasted locally. Pour-over, espresso, or a perfect cortado — paired with whatever's fresh.
Spelt, einkorn, and rye loaves sourced from regional mills. Dense, nutty, and made for spreading something on.
